Most fan games are never finished, but there are a few really good ones that are. Can we compile some sort of list of all the completed fan games? Or is there one already? A few that come to mind are: Sonic Before the Sequel Sonic After the Sequel Sonic Time Twisted Sonic Triple Trouble 16 Bit
Sonic Classic 1&2 and Axiom are the first that come to mind beyond what you mentioned. There's Fallen Star and the sequel to that too but I haven't played those
Sonic SMS Remake, Sonic SMS Remake 2 and (possibly) Sonic SMS Remake 3: Timelines, which ironically isn't a remake of any SMS game but is more of an original game based on zones from Sonic CD, Sonic Chaos and Sonic Triple Trouble, but with alot of the bells and whistles from the S1/2 SMS remakes. The engine used to make it was also used in a handful of other fangames which may or may not be finished.

Is Knuckles' Christmas what I think it is? I remember playing a rough Christmas-themed Knuckles game in the early 2000s.
Along with conventionally completed games, you might want to have a second list of "essentially complete games" that, although they might be demos or proof of concept, or abandoned projects, are just as wonderful to play!!
Those games have finished metroidvania sequels: Sonic Before the Sequel Aftermath (a short game that is a proof of concept for Chrono Adventure) Sonic Chrono Adventure - a mix of classic Sonic and metroidvania with good story. I also recommend Sonic and the Fallen Star.
