I created a Cheat Engine table file for Sonic Adventure 2. Just put that in My Documents\My Cheat Tables (I think) and then whenever you target Sonic Adventure 2 with Cheat Engine it will automatically ask if you want to load it. I've posted a link to download it on this wiki page. You can also just click here to download it.
Click the check boxes to open and close the groups (and of course freeze/unfreeze values), and also notice I added some comments in Table Extras. One thing to be aware of is I couldn't seem to get the character object data to work in 2-player, but it works fine in 1 player. By the way, one fun thing you can do is to load a stage, and before the title card sound effect finishes playing, Alt-Tab over to Cheat Engine. Then click the check box next to Current Level and change the value. This will create an effect similar to this.
